Red Lentils in Ayurveda

Lentils are truly a superfood that works wonders for your body and are tridoshic – beneficial and balancing for vata, pitta, and kapha. Red lentils are more beneficial for all doshas than some of the other types like brown or green. Some vata doshas may find they can be hard to digest, but if you rinse thoroughly and soak them for an hour or so they should be easier on your system. Cooking lentils with ghee and the proper spices can also aid in the digestion of them. Full of protein and fiber, lentils are a simple ingredient that is easy to find and very affordable. Red lentils help keep you full and are low on the glycemic index which helps to prevent blood sugar spikes. Being such a versatile ingredient, you can prepare them with any type of vegetable, water, or bone broth for a unique and personalized flavor profile. Lentils are packed with vitamin B, calcium, potassium, zinc, and iron.

Carrots and Ginger, A Flavorful and Nourishing Ayurvedic Duo

Carrots and ginger have long been a classic culinary combination providing a balance between sweetness and spice.  Carrots are a powerful antioxidant-rich food that helps to support eyesight (did you know ghee does as well?) as well as assisting in the cleansing of the blood and liver.  Ginger is an ancient medicinal herb that has a wide variety of healing properties including immune system support, digestive system support, healing nausea, and comforting aching joints.  The turmeric in our Farmtrue Golden Milk Latte mix also pairs well with the two ayurvedic ingredients and helps to add to the depth of flavor.

Ginger Masoor Dal Recipe

Masoor dal, or red lentils, are quick-cooking and nutrient-dense, making them perfect for healthy weeknight dinners. This ginger and garlic-loaded ayurvedic cleansing recipe is a fantastic introduction to cooking with Farmtrue Traditional Ghee and a variety of anti-inflammatory herbs and spices.  Adding in the Farmtrue Golden Milk Superfuel Latte mix makes this dal rich, spiced (but not spicy), sweet, warming and cleansing. This Ayurvedic Dal is a simple plant-based recipe for those looking to bump up the plants, fiber, and flavor with simple yet delicious ingredients.

Ingredients

  • 2 tablespoons Farmtrue Traditional Ghee
  • 1 large yellow onion, diced, about 2 heaping cups
  • 6 large garlic cloves, minced or grated, about 3 tablespoons
  • 2" piece ginger, minced or grated, about 3 tablespoons
  • 2 medium jalapeño peppers, seeds and ribs removed and minced, about ¼ cup (if you like things spicy, leave a few of the ribs and seeds in)
  • 8 medium carrots, peeled and chopped (3.5-4 cups)
  • 3 tablespoons Farmtrue Golden Milk Superfuel Latte mix
  • 1 14 ounce can coconut milk (light or full-fat)
  • 1 - 14 ounce can diced tomatoes with the juice
  • 2 cups red lentils, rinsed in a fine mesh strainer
  • 3 cups water
  • Sea salt to taste
  • 5 ounces chopped spinach
  • Lemon wedges, cilantro, black pepper and basmati rice for serving

Directions

  • 1 In a large pot, melt 2 tablespoons Farmtrue Traditional Ghee over medium heat. Add 2 heaping cups of diced onion and a good pinch of sea salt. Cook until onions are translucent, about 8-10 minutes.
  • 2 Add 3 tablespoons minced or grated garlic and ginger, along with the ¼ cup minced jalapeño. Stir to combine and cook for 1-2 minutes, until aromatic and starting to brown. Stir in 3 tablespoons Farmtrue Golden Milk Superfuel Latte mix and cook another 1-2 minutes.
  • 3 Stir in 4 cups chopped carrots, the can of coconut milk, the can of diced tomatoes (with their juice), and 2 cups red lentils. Once combined, add in 3 cups water and ½ teaspoon sea salt. Bring to a boil then lower to a simmer and cook for 20-25 minutes, until lentils are very soft and carrots are cooked through. Make sure to stir every 5 minutes while cooking to prevent the bottom from burning.
  • 4 Add chopped spinach and stir to wilt. If you plan on storing dal in the freezer, wait to add greens until reheating. Best added fresh!
  • 5 While dal cooks, prepare basmati rice, cut lemon wedges, and pick cilantro leaves. Lemon is key for serving, so don’t leave it off. The acid really balances the sweetness of the Latte mix and the spice from the jalapeño.
